๐Ÿฐ Boiled Fruit Cake Recipe

A rich, moist, and easy-to-make classic fruit cakeโ€”perfect for tea time or special occasions!

  • 2 cups mixed dried fruits (raisins, currants, sultanas, chopped dates)
  • 1 cup water
  • 1 cup sugar (brown sugar preferred)
  • 150g butter or margarine
  • 1 tsp baking soda
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice (or cinnamon + nutmeg)

  • 2 eggs
  • 1 tsp vanilla extract

In a pot, combine:
dried fruits, water, sugar, and butter.
Bring to a boil, then let it simmer for 5โ€“10 minutes.

Remove from heat and stir in the baking soda.
(It will foam slightlyโ€”this is normal!)
Let it cool for 10โ€“15 minutes.

In a separate bowl, mix together:
flour, baking powder, spice, and salt.

4๏ธโƒฃ Add Eggs & Vanilla
Once the fruit mixture is warm (not hot), beat in:
eggs and vanilla extract.

5๏ธโƒฃ Combine Everything
Gradually add the dry ingredients into the fruit mixture and mix well.

6๏ธโƒฃ Bake

  • Pour the batter into a greased baking pan
  • Bake at 160โ€“170ยฐC for 45โ€“60 minutes
  • Check with a toothpickโ€”if it comes out clean, itโ€™s done!
