Ingredients (Makes 12 muffins)

For the muffin batter:
โ€ข 2 cups (250g) all-purpose flour
โ€ข ยพ cup (150g) sugar
โ€ข 2 teaspoons baking powder
โ€ข ยผ teaspoon salt
โ€ข 2 large eggs
โ€ข ยพ cup (180ml) milk
โ€ข ยฝ cup (120ml) vegetable oil or melted butter
โ€ข 2 teaspoons vanilla extract
โ€ข ยฝ cup (120g) yogurt or sour cream (optional, for softness)

For the chocolate filling:
โ€ข 1 cup chocolate spread (Nutella or any chocolate hazelnut spread)
or
โ€ข 150g melted chocolate mixed with 2 tablespoons cream

 

 

 



Instructions
1. Prepare the chocolate filling
โ€ข Scoop small portions of chocolate spread onto a tray lined with baking paper.
โ€ข Freeze for 30โ€“60 minutes until firm. This makes filling the muffins easier.
2. Prepare the batter
โ€ข Preheat oven to 180ยฐC (350ยฐF).
โ€ข Line a muffin tray with cupcake liners.
โ€ข In a bowl, mix flour, sugar, baking powder, and salt.
โ€ข In another bowl, whisk eggs, milk, oil, vanilla, and yogurt.
โ€ข Add the wet ingredients into the dry ingredients.
โ€ข Mix gently until just combined. Do not overmix.
3. Fill the muffins
โ€ข Add a spoonful of batter into each muffin cup.
โ€ข Place a frozen chocolate piece in the center.
โ€ข Cover with more batter until cups are about ยพ full.
4. Bake
โ€ข Bake for 18โ€“22 minutes until golden and a toothpick inserted into the muffin edge comes out clean.
โ€ข Allow to cool for 5โ€“10 minutes before serving.
