- 1Β½ cups (190g) all-purpose flour
- 1 tsp baking powder
- Β½ tsp baking soda
- ΒΌ tsp salt
- Β½ cup (115g) unsalted butter, softened (or vegetable oil)
- ΒΎ cup (150g) sugar
- 2 large eggs
- Β½ cup (120ml) milk or yogurt
- 1 tsp vanilla extract
- Β½ cup (60g) chopped almonds
- Β½ cup (80g) raisins (soaked in warm water for 10 minutes, then drained)

1οΈβ£ Preheat oven to 180Β°C (350Β°F) and line a 12-cup muffin tray with paper liners.
2οΈβ£ In a bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
3οΈβ£ In another bowl, cream butter and sugar until light and fluffy.
4οΈβ£ Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
5οΈβ£ Add the dry ingredients alternately with milk (or yogurt), mixing gently until just combined.
6οΈβ£ Fold in the chopped almonds and soaked raisins.
